Chicken and Mango Salad

Salad Ingredients:
2 large chicken breasts
salt and pepper to season chicken (to taste)
2 tsp olive oil
1-2 cos baby lettuce, chopped and rinsed
½ punnet of cherry tomatoes halved
1 Lebanese cucumber sliced
1 mango - peeled and cubed
1 avocado - peeled and cubed
¼ cup coriander (if you sit on the 'yes' to coriander side of the fence)
½ cup toasted flaked almonds (to sprinkle on top)
Dressing Ingredients:
½ cup olive oil
3 tbsp apple cider vinegar
2tsp dijon mustard
2 tsp honey
1 clove garlic - crushed
salt and pepper to taste
Method:
Cut chicken breast in half (lengthways) and season with salt and pepper as desired
Saute in fry pan with olive oil for ~ 3 minutes on each side (until browned and cooked through)
Remove from heat and allow to rest for ~ 5 minutes
In a large salad bowl, add chopped lettuce, tomatoes, cucumber, mango and avocado and coriander (if using)
Combine all salad dressing ingredients in a jar. Put on lid and shake until well combined
Slice the chicken breasts into strips and either place on top of the salad now, or portion up on top of individual salad portions later on
Pour salad dressing on top of salad and stir to mix well.
