Tomato and Bocconcini Salad

Ingredients:

  • 3-4 medium sized truss tomatoes (or tomatoes of your choice - these are just my favourite)

  • 1-2 tubs of large bocconcini balls

  • Bunch of fresh basil

  • Olive oil

  • Balsamic vinegar

Method:

  1. Slice your tomatoes into medium sized slices

  2. Slice your bocconcini into the same number of slices as you have tomato

  3. Break off large fresh basil leaves (same number as above)

  4. Place the ingredients in order on a straight platter or round plate so that there is a tomato --> cheese --> basil --> tomato --> cheese --> basil etc

  5. Drizzle with olive oil and balsamic vinegar
