Apple and Rhubarb Crumble

Ingredients:

  • 1 bunch of rhubarb

  • Juice from one orange

  • 6 green apples

  • Crumble topping:

  • 1 cup of whole rolled oats

  • ½ cup wholemeal flour

  • 1 tsp cinnamon

  • 100g butter/margarine (or any fat that is solid at room temperature) - cubed and at room temperature

Method:

  1. Peel and chop the rhubarb into small chunks and place into a medium sized pot and add the orange juice

  2. Cook on low heat, stirring occasionally until the rhubarb has softened and fallen apart (set aside)

  3. Meanwhile peel and cube the green apples and place into an oven proof dish

  4. Pour the rhubarb over the top of the apples and stir around to cover the apples all over

  5. Heat the oven to 180C

  6. For the crumble, put all of the crumble ingredients into a food processor and process on 'turbo' bursts until the mixture comes together into clusters

  7. Spread the crumble over the fruit mixture so that the whole dish is covered

  8. Place into the oven and cook for ~ 25-30 minutes (until the crumble is golden brown)
