Chicken and Mango Salad

Salad Ingredients:

  • 2 large chicken breasts

  • salt and pepper to season chicken (to taste)

  • 2 tsp olive oil

  • 1-2 cos baby lettuce, chopped and rinsed

  • ½ punnet of cherry tomatoes halved

  • 1 Lebanese cucumber sliced

  • 1 mango - peeled and cubed

  • 1 avocado - peeled and cubed

  • ¼ cup coriander (if you sit on the 'yes' to coriander side of the fence)

  • ½ cup toasted flaked almonds (to sprinkle on top)

Dressing Ingredients:

  • ½ cup olive oil

  • 3 tbsp apple cider vinegar

  • 2tsp dijon mustard

  • 2 tsp honey

  • 1 clove garlic - crushed

  • salt and pepper to taste

Method:

  • Cut chicken breast in half (lengthways) and season with salt and pepper as desired

  • Saute in fry pan with olive oil for ~ 3 minutes on each side (until browned and cooked through)

  • Remove from heat and allow to rest for ~ 5 minutes

  • In a large salad bowl, add chopped lettuce, tomatoes, cucumber, mango and avocado and coriander (if using)

  • Combine all salad dressing ingredients in a jar. Put on lid and shake until well combined

  • Slice the chicken breasts into strips and either place on top of the salad now, or portion up on top of individual salad portions later on

  • Pour salad dressing on top of salad and stir to mix well.
