Cashew and Lemon Bliss Balls

There are so many things to love about these bliss balls that I just don’t know where to start! Firstly, they are very simple to make and only contain a handful of ingredients. They are high in protein, high in wonderful healthy fats and most importantly, filling for after school hungry tummies!

There are many bliss ball/protein ball recipes out there but the reason I love this one is because the protein comes from its natural source (the cashews) and if you don’t add the maple syrup (which really isn’t necessary) then they don’t have any added sugar either.

Ingredients

  • 1 cup of raw cashews

  • 1 cup of dessicated coconut (plus extra for rolling)

  • The juice and rind of one lemon (or orange or lime)

  • 1 tsp of maple syrup (optional)

Method

Place all ingredients into a blender and blend on medium speed until mixture is crumbly but hold together when you press a spoonful.

Roll ~ 1 tablespoon of mixture into balls and then roll into coconut and set aside

Please balls into the fridge to set for 1-2 hours before serving
